Mesmers are so much fun. However, they'll pair well with any secondary. When I finished my mesmer, I had it as a Me/Mo, but in the end I wished I had made it a Me/N.
Me/N is just great for PvP and PvE, because the Hexes on both sides pair well. Backfire + Soul Leech is close to 200+ damage if the caster casts.
However, you can't go wrong with any secondary. Me/{some melee class} works well as you can make some kind of IW warrior.
Anyway, I'd recommend going with Me/N for starters, then changing it up in the future.
Me/E is also fun with fast casting flare or stones - it's fun, but not really effective. Anyway, just try them all out using a PvP char. I'm sure you'll find a secondary that works well with you.

I'm a Me/E for one spell: Lesser Glyph of Energy. You'll probably find yourself running out of energy to cast a lot, and this spell helps.
Chewbacca is right than any class pairs up well with the mesmer, but to be honest, I use primarily mesmer skills. The only other Elementalist skill I even touch now is Windborne Speed for running to other towns.
Remember, you can always change your secondary profession, though, so it really doesn't matter much what you choose from the start.

I agree with all the above, any secondary can work for a Mesmer.
I mainly play a PvE Mesmer. I found that no matter what secondary I had I tended to only take Mesmer skills, so now I run a Mesmer/Monk for the fast cast ressurect.
The only other thing I can say is don't be too tempted to run a fast casting Mesmer/Elementalist combo, while it is fun to get those Ele spells off fast, your damage output will be hampered by the high energy costs and exhaustion. Others may be able to get a good build going in that combo, I couldn't .

I run a Me/Mo most of the time, because of the fast casting res mentioned by kirgr526.
I can think of some good Me/N builds, but many Necro skills require even more energy than mesmer skills, so watch your energy management.
I never had that much energy problems that I have to use /E for glyph.
When the area has enough casters, I take Power Drain for energy management. If it's mostly attackers, Ineptitude{e} + Spirit of Failure.
I like playing IW sometimes, but would not surgest Me/W as starter just because of that. Illusionary Weaponary is an elite and you will probably cap this one after you have the posibility to change your second profession.
I tend to run builds with (almost) only primary profession skills (and most split over only 2 or 3 attributes), so I'm probably not the person to answer which skills/professions combine the best.
Happy mesmerizing

I personally usually either play Me/E for Glyph of Renewal or Me/Mo for a fast cast "hard res", as said above, and/or Draw Conditions.
(IMO the best resser, though, is E/Mo.)

A few Air Spike spells are also fun, especially with the fourth quick hit spell now in Nightfall.
Lightning Strike
Evenerating Charge
Arc Lightning
Lightning Bolt
All do about the same damage and are insta-casts.

Just wanted to point out that if you are using your new Mesmer as a PvE char, you probably aren't going to have access quite yet to Glyph of Renewal, as it is an elite, and pops up a little later down in the game. Once you cap it, you can use it (if you so desire) or use Glyph of Lesser Energy. But..in the meantime, if you are using the Ele as your secondary solely for this purpose, you might want to start off with something useful until you DO come across capping Glyph of Renewal. I'll say this to a million people that you can never go wrong with having a monk secondary.
However, if your character is a PvP character and you already have the skill unlocked..go for it if you want. Having a Necro secondary is a good choice if you are focusing on the PvP aspect of things. A lot of things mesh well with all the hexes and such. The nice thing is the Mesmer compliments a lot of professions quite well. Just look at what your intentions are, look at each of the profession skills, and see which ones compliment your type of gameplay.
IMHO, Me/Mo for PvE ; Me/N for PvP
